With our first steps now firmly planted into our 31st year of trading, I am afforded time to proudly reflect upon how far Cutting Edge Services has evolved as a business since its inception in 1992. The multiple challenges we have faced as a business were often mirrored across the wider industry.  From labour shortages to changes in legislation and COVID through to Brexit, the tests have been constant. That said, the one constant which has kept our business strong is people.

The teams and individuals at Cutting Edge Services have always demonstrated resounding resolve, ensuring our customers’ needs and solutions are at the top of their agenda. So Karl – what is primal inflation?

Primal inflation is basically the term we use for the process of using specialised equipment to inject air into a primal cut of meat, such as the forequarters or hindquarters of a cut of beef or pork. What that does is inflate the connective tissues between the muscles, so that it’s easier to cut them cleanly.

Crucially, the air that we use is filtered and sterile – that means it’s free from any foreign bodies like oil and water molecules, or bacteria in the air. We obviously can’t work with air that hasn’t been carefully sterilised beforehand, as it would otherwise make the cut unsuitable for use. That would mean a lot of wastage!

In terms of the species it works best with, we primarily use it on beef and pork. To be honest if you’re thinking about taking advantage of this service, those are the ones I’d recommend. We tend to use primal inflation just before the deboning process begins, where it’s processed by the operators.

Why are we going to IFFA?

IFFA is a massive industry trade show, widely regarded as the world’s largest. With this year’s attendees due to include around 900 businesses from more than 40 countries, IFFA covers the entire market for processing, packaging and selling of meat and alternative proteins.

2022 marks the return of the IFFA for the first time since the emergence of the Covid-19 pandemic, and with the last restrictions having been lifted in Germany on the 2nd April, there’s a palpable sense of anticipation for the event – not least from our own team here at Cutting Edge Services! Our experts will be heading to Frankfurt for the exhibition in mid-May, where we’ll be joining a whole host of our partners and suppliers who’ll also be there for the event.
